Cherry Pistachio Fridge Oats
Serves 1
1/3 cup quick cooking steel cut oats
6 oz plain nonfat Greek yogurt
1/2 cup coconut milk, or other milk of choice
2 Tbsp shelled pistachios
12-15 pitted fresh cherries, halved
1 tsp honey or maple syrup
Combine all ingredients in a covered container, mix well, then cover and refrigerate overnight. Enjoy in the morning!
